- 3 quarts cold water
- 1/3 cup balsamic vinegar
- 1/4 cup salt
- 1 bay leaf
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 teaspoon dried rosemary
- 8 cloves garlic, minced
- 1 pinch salt
- 3 tablespoons olive oil, or as needed
- 1 tablespoon freshly ground black pepper
- 2 teaspoons red pepper flakes, or to taste
- 4 pounds chicken wings, separated at joints, tips discarded
- 2 tablespoons fine bread crumbs
- 1 cup finely grated Parmigiano-Reggiano cheese, divided

Heat your oven to a high temperature of 450 degrees Fahrenheit or 230 degrees Celsius. Cover a baking sheet with aluminum foil and spray it with cooking spray for easy cleanup.

In a large container, mix together water, vinegar, one quarter cup of salt, a few sprigs of bay leaf, some thyme, oregano, and rosemary. Bring the mixture to a rolling boil and then add chicken wings back into the pot. Continue boiling for 15 minutes, stirring occasionally.

Remove the chicken wings from the pot with a spoon and place them on a rack to cool down. Allow them to air dry for 15 minutes.

Mash the garlic cloves with a pinch of salt in a small bowl until you get a smooth paste.

In another large bowl, combine the mashed garlic, olive oil, black pepper, and some red pepper flakes. Mix everything together until well combined.

Add the chicken wings to the bowl with the garlic mixture and some bread crumbs. Toss everything together until the chicken wings are evenly coated.

Sprinkle the chicken wings with half a cup of Parmigiano-Reggiano cheese and then transfer them to the prepared baking sheet.

Cover the chicken wings with the remaining half a cup of Parmigiano-Reggiano cheese and put them in the preheated oven. Bake until browned, taking about 20 to 25 minutes.
