- 1/2 cup unsalted butter, at room temperature
- 1 1/4 cups white sugar
- 1 1/3 cups self-rising flour
- 1/3 cup rolled oats
- 2/3 cup whole milk
- 1/4 cup white sugar
- 2 tablespoons cold water, or as needed to wet topping sugar

Preheat your oven to a high temperature of 375 degrees Fahrenheit (or 190 degrees Celsius, if you prefer metric).

Position a baking sheet on the oven rack below the middle rack to catch any spills or drips that may occur during baking.

Grease a 2-inch deep (equivalent to 2-quart) baking dish generously with butter.

Add sliced peaches to the prepared baking dish and sprinkle them with a squeeze of fresh lemon juice and some grated lemon zest.

Mix the softened butter and granulated sugar together in a large mixing bowl until you achieve a smooth, creamy paste. This should take around 4-5 minutes.

Add some rolled oats and flour to the bowl, stirring until these ingredients are evenly distributed throughout the butter-sugar mixture. Continue stirring for another 4-5 minutes.

Gradually pour in some milk, stirring until the mixture becomes smooth and spreadable like a thick paste. This should take around 3-4 minutes.

Spoonfuls of the batter mixture should now be dropped onto top of the peaches. Use a spatula to spread the batter evenly over the surface of the fruit.

Sprinkle an additional 1/4 cup of granulated sugar over the top of the batter. Use a spray bottle to lightly mist the surface with water, ensuring that the sugar is evenly wetted and glistens.

Place the baking dish on the middle rack of your preheated oven and bake until golden brown and crispy, approximately 45 minutes.
