Prepare the ingredients by washing and drying the frog legs thoroughly; set them aside momentarily.

Combine a mixture of flour, cornmeal, crushed saltine crackers, black pepper, salt, and finely chopped onion in a large container designed for storing food; mix the ingredients thoroughly.

In another bowl, whisk together eggs and milk until well combined.

Heat a substantial amount of vegetable oil and peanut oil in a large cooking vessel over an elevated heat setting. The ideal depth for the oil should be about 1/2 inch deep.

Dip each frog leg into the egg mixture in batches, ensuring all legs are coated; then press the leg firmly into the cracker mixture to achieve an even coating. Arrange the breaded legs, unstacked, on a serving plate. Repeat this process for the remaining frog legs.

Carefully lower each breaded leg into the hot oil in batches, taking care not to overcrowd the vessel. Fry the legs until they turn a golden brown color, which should take around 4 to 5 minutes on each side. Transfer the fried legs to a paper towel-lined plate to drain excess oil. Repeat this process for the remaining frog legs.
