Crispy Fried Tilapia
Ingredients
  • 10 (4 ounce) fillets tilapia
  • salt and ground black pepper to taste
  • 1/3 cup all-purpose flour
  • 1 cup buttermilk
  • 1 large egg
  • 1/2 cup all-purpose flour
  • 1/2 cup yellow cornmeal
  • 2 tablespoons seafood seasoning (such as Old Bay®)
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • vegetable oil for frying
Instructions
1
Prepare the fillets for cooking by sprinkling a pinch of salt and pepper evenly over them.
2
Next, lightly coat the fillets with 1/3 cup of flour, making sure to cover them evenly.
3
In a separate bowl, whisk together buttermilk and egg until they're fully incorporated.
4
Combine 1/2 cup of flour, cornmeal, seafood seasoning, baking powder, and baking soda in another bowl to create a dry mixture.
5
Dip each flour-coated fillet into the egg mixture, coating it thoroughly, then roll it in the dry mixture to coat.
6
Heat a generous amount of oil over medium-high heat in a large frying pan or deep fryer to 350 degrees F (175 degrees C).
7
Cook the fillets in batches, frying them in hot oil until they're golden brown and crispy on both sides, about 2 minutes per side.
8
Transfer the fried fillets to a paper towel-lined plate to drain excess oil and season immediately with salt.
