- 1 cup buttermilk
- 1 large egg
- 1/2 cup all-purpose flour
- 1/2 cup yellow cornmeal
- 2 tablespoons seafood seasoning (such as Old Bay®)
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- vegetable oil for frying

Prepare the fillets for cooking by sprinkling a pinch of salt and pepper evenly over them.

Next, lightly coat the fillets with 1/3 cup of flour, making sure to cover them evenly.

In a separate bowl, whisk together buttermilk and egg until they're fully incorporated.

Combine 1/2 cup of flour, cornmeal, seafood seasoning, baking powder, and baking soda in another bowl to create a dry mixture.

Dip each flour-coated fillet into the egg mixture, coating it thoroughly, then roll it in the dry mixture to coat.

Heat a generous amount of oil over medium-high heat in a large frying pan or deep fryer to 350 degrees F (175 degrees C).
