- 20 large fresh morel mushrooms
- 1 1/2 cups milk
- 1 large egg
- 1/2 cup all-purpose flour
- 1/2 cup Italian cracker crumbs
- 1 teaspoon paprika
- 1/2 teaspoon ground black pepper
- 1/4 teaspoon cayenne pepper, or more to taste
- 1/4 teaspoon dried oregano
- 1/8 teaspoon dried thyme
- 1/8 teaspoon ground cumin
- 1 quart vegetable oil for frying, or as needed

Submerge morels into a large container of warm, salted water and allow them to rehydrate for 30 minutes. Remove from the water and gently pat dry with paper towels; set aside.

In a small bowl, blend milk and egg until they are fully incorporated. In another large container or bag, combine flour, cracker crumbs, paprika, black pepper, cayenne pepper, oregano, thyme, and cumin.

Meanwhile, heat oil in a deep fryer or large saucepan to 350 degrees F (175 degrees C). During this time, prepare the breading process by dipping mushrooms into the milk mixture one at a time. Coat each mushroom in the breading mixture, shaking off any excess.

Once the oil has reached the desired temperature, carefully add breaded mushrooms to the hot oil in batches. Fry until dark brown and crispy, flipping halfway through; this should take 2 to 3 minutes per side. Remove the fried mushrooms from the oil and place them on paper towels to drain excess moisture.
