- 4 (1 pound) fresh lobster tails, cleaned and halved but still in shell
- 2 quarts oil for frying, or as needed

Combine cornmeal, flour, a pinch of heat from cayenne pepper, garlic powder, onion powder, a touch of salt, and a dash of black pepper in a 1-gallon resealable plastic bag; mix until the ingredients are thoroughly blended.

Add one lobster tail half to the bag and shake vigorously until it is evenly coated, then transfer it to a plate.

Repeat this process for the remaining lobster tails to ensure they are all fully coated.

Heat oil in a deep fryer to 365 degrees F (180 degrees C).

Carefully place one coated lobster tail into the preheated oil; cook until the meat turns white and the coating is lightly browned, 4 to 5 minutes.
