- 2 cups canola oil, or as needed
- 1/2 cup ranch dressing
- 2 tablespoons Cajun seasoning
- 2 teaspoons hot pepper sauce

Prepare the tomatoes for frying by sprinkling a pinch of salt and a few grinds of pepper over their surface.

Next, combine the flour, a small amount of salt, and a similar amount of pepper in a shallow dish. Pour buttermilk into another shallow dish. In a third shallow dish, blend cornmeal, chopped parsley, smoked paprika, a small amount of salt, and the same amount of pepper with a pinch of cayenne pepper.

Dip each tomato slice into the flour mixture, coating it evenly, then dip it into the buttermilk, making sure to cover all surfaces. Finally, press both sides of the tomato slice firmly into the cornmeal mixture, ensuring it is well-coated. Place the coated tomatoes on a baking sheet and let them sit for 10 to 15 minutes, allowing the coating to absorb.

In a deep-fryer or large saucepan, heat oil over high heat until it reaches 350 degrees F (175 degrees C).

Carefully drop the coated tomato slices into the hot oil, making sure not to overcrowd the pan. Cook for 2 to 3 minutes or until they turn golden brown and float to the surface. Remove the fried tomatoes from the oil with a slotted spoon and place them on a plate lined with paper towels to drain excess oil.
