  • 2 cucumbers, peeled and sliced
  • 1 cup cornmeal
  • salt to taste

Preheat a large, thick-walled skillet over medium-high heat, allowing the vegetable oil to warm up. Prepare a plate by lining it with a paper towel; set it aside for later use.

Dredge the cucumber slices in cornmeal, coating them evenly. Fry the coated cucumber slices in the hot oil, one or two at a time, until they turn golden brown and crispy, approximately 2 minutes per side. Remove the fried cucumbers from the oil with a slotted spoon and transfer them to the prepared plate; sprinkle with salt for garnish.
