  • 1/2 cup water
  • salt and pepper, to taste
  • 1 pound catfish fillets, cut in strips
  • 1 1/2 cups fine cornmeal
  • 1/2 cup all-purpose flour
  • 1 teaspoon seafood seasoning, such as Old Bay™
  • 1 quart vegetable oil for deep frying

Combine the buttermilk, water, salt, and pepper in a small bowl. Pour this mixture into a large, shallow dish that is suitable for holding the fillets. Place the fillets in this dish in a single layer, ensuring each side is coated with the marinade. Set it aside to allow the fillets to absorb the flavors.

In a separate container, combine the cornmeal, flour, and seafood seasoning. Place these dry ingredients in a 2-gallon resealable plastic bag, leaving enough room for the fillets. Add the fillets to the bag one by one and gently massage them until they are evenly coated with the dry mixture.

Heat a substantial amount of oil in a deep fryer to 365 degrees F (185 degrees C). Once hot, carefully add the fillets to the oil in batches to prevent overcrowding. Fry the fillets until they are crispy and golden brown, taking approximately 3 minutes to achieve this. Remove the fillets from the oil and place them on paper towels to drain excess oil.
