Crispy Focaccia Panzanella
Ingredients
  • 5 cups cubed focaccia bread
  • 1 clove garlic, crushed
  • 1/2 teaspoon white sugar
  • 1 anchovy fillet
  • 1/3 cup red wine vinegar, or more to taste
  • 1/3 cup extra-virgin olive oil, or to taste
  • 3 vine-ripened tomatoes, cut into 1- to 2-inch pieces, or more to taste
  • 1 pint cherry tomatoes, halved
  • salt and freshly ground black pepper to taste
  • 2/3 cup sliced fresh mozzarella cheese
  • 1/4 cup thinly sliced red onion
  • 1/2 cup fresh basil leaves, torn into small pieces
Instructions
1
Collect all necessary components and heat the oven to 350 degrees Fahrenheit (175 degrees Celsius). Cover a baking sheet with parchment paper or a silicone mat for easy cleanup.
2
Arrange bread cubes on the prepared baking sheet in an even layer.
3
Bake the bread in the preheated oven until it reaches a golden brown color and becomes crispy, approximately 20 minutes. Take the bread out of the oven and allow it to cool down completely.
4
Combine minced garlic, granulated sugar, and anchovy paste using the back of a fork to create a coarse mixture. Add vinegar and oil; blend until well combined.
5
Mix vine-ripened tomatoes, cherry tomatoes, salt, and pepper into the dressing using a spatula. Allow the mixture to sit for 10 minutes.
6
Combine sliced mozzarella cheese, red onion, and the tomato mixture; toss with a spatula until they are well combined. Add bread cubes to the mixture and blend until it reaches your desired level of saturation. Mix in chopped basil.
7
Taste the salad for seasoning before serving and enjoy your creation!
