- 1/4 teaspoon ground black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon dried oregano
- 1/8 teaspoon cayenne pepper
- 1 cup finely chopped red bell pepper
- 1 cup finely chopped fresh spinach
- 1/2 cup shredded sharp Cheddar cheese

Preheat your oven to 375 degrees Fahrenheit, or 190 degrees Celsius.

To prevent sticking, generously spray a 12-cup muffin tin with cooking spray.

Combine egg whites, yogurt, salt, black pepper, garlic powder, onion powder, oregano, and cayenne in a bowl and whisk until the mixture is smooth and free of lumps. Add red bell pepper, spinach, and Cheddar to the bowl and mix until well combined.

Divide the mixture evenly among the 12 muffin cups, filling each cup to almost capacity.

Place the muffin tin in the preheated oven and bake until the egg bites have puffed up significantly and start to develop a golden brown color, taking 20-25 minutes. Remove the muffin tin from the oven and let it cool for 5 minutes; during this time, the bites will lose their puffiness.

Use a knife to loosen and remove the egg bites from the muffin tin, taking care not to break them. Allow the bites to cool completely at room temperature.
