Place sliced cucumbers, minced garlic, and chopped fresh dill in a food-grade storage container with a secure seal. Mix together water, white vinegar, kosher salt, and alum in a measuring cup; pour the liquid into the container and seal it tightly.

Submerge the container in a heat-resistant water bath that is designed to work with a sous vide device. Set the device to cook at 140 degrees Fahrenheit (60 degrees Celsius) for an extended period of 2 hours and 30 minutes.

Once the cooking process is complete, remove the container from the water bath and let it sit at room temperature for approximately 1 hour to allow it to cool. Transfer the pickles and their accompanying liquid to a clean glass jar with a tight-fitting lid, then refrigerate the contents for 24 hours before consumption.
