  • 1 1/2 cups shredded Cheddar cheese
  • chopped green onion
  • 1/4 cup mayonnaise
  • 2 (16.3 ounce) cans refrigerated biscuit dough, separated
  • vegetable oil for frying
  • 1 pinch paprika, or to taste
  • cayenne pepper, or to taste
Instructions

Combine the ingredients of crawfish, Cheddar cheese, green onion, and mayonnaise in a large bowl to create the filling for your beignets.

Using your hands or a rolling pin, flatten and stretch each of the 12 biscuit dough pieces into a rectangular shape, approximately 4x5 inches in size.

Place one serving of the crawfish filling in the center of each flattened biscuit dough piece; fold the sides over the filling to enclose it, working your hands until the biscuit is fully sealed and reaches a desired shape. Repeat this process with the remaining filling and biscuit dough pieces.

Heat oil in a deep fryer or large saucepan to 375 degrees F (190 degrees C), creating a hot environment for frying the beignets.

Carefully lower each beignet into the hot oil, taking care not to splash or spill any of the oil. Fry until they float to the top and are golden brown on all sides, flipping them as needed, for approximately 5 minutes total.

Transfer the fried beignets to a paper towel-lined plate to drain excess oil, and sprinkle the tops with paprika and cayenne pepper.
