Ingredients
- 1 (4 pound) corned beef brisket with spice packet
- 4 cups water to cover
- 2 (12 fluid ounce) cans amber ale
- 1 large onion, quartered
- 4 red chiles
- 3 cloves garlic
- 3 cinnamon sticks
- 12 peppercorns
- 4 bay leaves
- 1/2 cup brown sugar
- 1/2 teaspoon ground cloves
- 1/2 teaspoon ground ginger
- 1/2 teaspoon ground mustard
- 1/4 teaspoon celery salt
- 1/4 teaspoon caraway seeds
Instructions
1
Place a large Dutch oven on the stovetop over high heat and add corned beef brisket along with a spice packet. Pour in enough water to cover the meat completely, then add ale, onion, chiles, garlic, cinnamon sticks, peppercorns, and bay leaves. Bring the mixture to a rolling boil before gradually reducing the heat to simmer for 4 to 5 hours.
2
In a separate bowl, mix together brown sugar, cloves, ginger, mustard, celery salt, and caraway seeds to create a sweet and spicy rub. Once the corned beef has finished cooking in the liquid, remove it from the pot and discard any remaining aromatics.
3
Preheat an outdoor grill to medium heat, then lightly oil the grill surface. Place the corned beef on the hot grill and cook for an additional 5 to 10 minutes, or until the coating is crispy and golden brown.
