  • 1 tablespoon all-purpose flour
  • 1 1/2 teaspoons white sugar
  • 1/4 teaspoon salt
  • 1 pinch ground black pepper
  • 1 egg white
  • 1/4 cup vegetable oil for frying

To prepare the corn batter, hold a sharp knife firmly in hand and carefully slice the kernels from the corn cobs. Utilizing the dull side of the knife, gently scrape off any remaining milk and pulp from the cobs, collecting them in a bowl. Combine the cut corn with egg yolk, flour, sugar, salt, and pepper in a separate bowl, stirring until well incorporated.

In another bowl, whisk the egg white into stiff peaks using a hand mixer or whisk. Gently fold the egg white mixture into the corn batter.

Heat a skillet or frying pan over medium heat, ensuring it is lightly oiled. Using a spoon, drop large portions of the corn batter onto the skillet, leaving about an inch between each portion. Cook for 2 minutes on the first side, or until golden brown. Flip over and cook for another 2 minutes on the opposite side, or until golden. Remove from heat briefly to drain excess batter on paper towels before serving.
