Ingredients
  • 4 skinless, boneless chicken breast halves
  • 5 tablespoons olive oil
  • 2 eggs, beaten
  • 1 cup Italian-style dry bread crumbs
  • 1 (14.5 ounce) can chicken broth
  • 1 (10 ounce) can asparagus, drained
  • 4 slices provolone cheese

Preheat a large 2-inch deep skillet over medium heat. Dip chicken pieces into an egg mixture, followed by a coating of bread crumbs. Sear the chicken in the skillet on both sides until it develops a golden brown crust.

Once the chicken is nicely browned, pour in broth and arrange asparagus spears evenly over the top of the chicken. Place a slice of cheese on each piece of chicken to add flavor and creaminess.

Cover the skillet with a lid and continue cooking for 15 minutes, or until the chicken is fully cooked through and no longer pink in its center.
