Ingredients
  • 4 skinless, boneless chicken breast halves - cooked and shredded
  • 1 1/2 cups shredded smoked Cheddar and Swiss cheese blend
  • 1 (7 ounce) can green salsa
  • 1 cup chopped onion
  • 20 (6 inch) corn tortillas
  • 1 quart peanut oil for frying, or as needed
  • 1 cup sour cream
  • 1 cup chunky salsa
  • 1 cup guacamole

Preheat the deep-fryer to a high temperature of 350 degrees Fahrenheit (or 175 degrees Celsius).

In a modest-sized bowl, combine the shredded chicken, cheese, green salsa, and onion. Place approximately 1 1/2 tablespoons of the mixture onto tortillas, making sure to leave a small border around the edges so that when rolled up, each one is roughly 1 inch wide. This will prevent the filling from spilling out during cooking. Secure the rolls with toothpicks to keep them in place.

Fry 4 or 5 taquitos at a time, allowing for sufficient space between each one to ensure even cooking. Cook for 3 to 5 minutes, or until the taquitos turn a golden brown color. Once they float to the surface, continue cooking for another minute or so. If the taquitos are not crispy when cooled, it may indicate that they need to be cooked for a longer period. Remove the taquitos from the oil and drain them on paper towels. Serve with a side of sour cream, salsa, and guacamole for dipping.
