Crispy Chicken Schnitzel for Busy Families
Ingredients
  • 2 large eggs
  • 3 tablespoons honey
  • 3 tablespoons Dijon mustard
  • 2 1/2 tablespoons soy sauce
  • 1 tablespoon crushed garlic
  • 3 cups bread crumbs, or as needed
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • vegetable oil for frying
  • 12 boneless chicken breast halves, pounded very thin
  • 1 lemon, cut into wedges
Instructions
1
Combine eggs, honey, Dijon mustard, soy sauce, and minced garlic in a bowl to create a binding mixture. In another shallow dish, combine bread crumbs, salt, and pepper for a crunchy coating.
2
Heat approximately 1/2 to 1 inch of vegetable oil in a heavy skillet over medium-high heat, reaching a temperature of 350 degrees F (175 degrees C). This can also be achieved using a deep fryer.
3
Dip chicken slices into the egg mixture, ensuring they are fully coated, before pressing them firmly into the bread crumbs to achieve an even coating.
4
Fry chicken slices in batches, using tongs to carefully place them into the hot oil. Cook for 3 to 4 minutes per side, or until the chicken reaches an internal temperature of 165 degrees F (74 degrees C) and is no longer pink in the center, with a golden-brown exterior. Remove from heat, drain on paper towels, and serve with lemon wedges on the side.
