Crispy Chicken Hash
Ingredients
  • 1/4 cup butter
  • 1/4 cup olive oil, or more as needed
  • 1 (16 ounce) package frozen diced hash brown potatoes (such as Ore-Ida®), thawed
  • 3 skinless, boneless chicken breast halves, diced
  • 1 small onion, chopped
  • 1 green bell pepper, chopped
  • 1/4 cup chicken broth, or more as needed
  • 1 pinch Montreal-style steak seasoning, or to taste
  • 1 pinch garlic powder, or to taste
  • 1 pinch seasoned salt, or to taste
  • 1 bunch broccolini, chopped
  • 1 cup shredded smoked Cheddar cheese
Instructions
1
Combine the butter and olive oil in a substantial cooking vessel over medium heat. Heat the mixture until it reaches a suitable temperature, allowing you to cook and stir an assortment of ingredients together.
2
These ingredients include potatoes, chicken, onion, green bell pepper, chicken broth, steak seasoning, garlic powder, and seasoned salt.
3
Continue to cook the mixture until the chicken is no longer pink in the center, and most of the liquid has evaporated. This process should take 15 to 20 minutes.
4
During this time, add more olive oil if the mixture becomes too dry. This will ensure that everything is well-coated and cooking smoothly.
5
Once the chicken has reached the desired level of doneness, proceed to add broccolini and Cheddar cheese into the chicken hash.
6
Continue cooking until the broccolini is tender, and the Cheddar cheese has melted. This should take an additional 2 to 3 minutes.
