  • 2 skinless, boneless chicken breast halves, thinly sliced

  • 1 lemon, cut into wedges

Next, whisk eggs together with salt and pepper in a shallow dish. In another dish, pour flour, and in a third, scatter bread crumbs.

Proceed by working with one piece of chicken at a time, carefully pressing it into the flour to coat and shaking off any excess. Dip the chicken into the beaten eggs, then press it firmly into the bread crumbs. Gently toss the chicken between your hands to allow excess bread crumbs to fall away. Place each piece of breaded chicken on a plate, ensuring not to stack them.

In a large skillet, heat vegetable oil over medium heat. Pan-fry the chicken in batches of 2 or 3 pieces until it's golden brown and no longer pink in the center, taking about 2 to 4 minutes per side. To verify doneness, insert an instant-read thermometer into the center and check that it reads at least 165 degrees Fahrenheit (74 degrees Celsius). Transfer the cooked chicken to a baking sheet and keep it warm in the preheated oven while cooking the remaining chicken.
