Ingredients
- 4 eggs
- 1/4 cup heavy cream
- 2 tablespoons cayenne pepper
- 1 tablespoon salt
- 1 tablespoon ground black pepper
- 2 cups all-purpose flour
- 1 cup cornstarch
- 1 tablespoon salt
- 1 quart peanut oil for frying
- 8 chicken tenders
- 1 cup mayonnaise
- 1/4 cup maple syrup
- 2 teaspoons prepared horseradish
- 1 teaspoon dry mustard powder
- 12 slices bacon
- 8 plain frozen waffles
- 8 thin slices Cheddar cheese
Instructions
1
Combine eggs, cream, cayenne pepper, salt, and black pepper in a large bowl and whisk until everything is fully incorporated; set aside momentarily.
2
Separate the flour, cornstarch, and salt into a paper bag and mix until well combined; set aside.
3
Dip the chicken pieces into the beaten egg mixture, then coat them in the flour mixture by shaking it vigorously until they are evenly covered. Place the coated chicken pieces on a wire rack and allow them to rest for 20 minutes, allowing the coating to set properly.
4
Heat a substantial amount of oil in a deep fryer or large saucepan to 375 degrees F (190 degrees C). Fry the chicken pieces in small batches until they are golden brown, taking about 5 to 8 minutes. Remove the fried chicken pieces to a paper towel-lined plate to drain excess oil and set aside.
5
Combine mayonnaise, maple syrup, horseradish, and mustard powder in a medium-sized bowl and mix until well combined; set aside.
6
Preheat the oven's broiler to the desired temperature.
7
Place bacon pieces in a large, deep skillet and cook over medium-high heat, turning occasionally, until they are evenly browned, taking around 10 minutes. Drain the bacon on a paper towel-lined plate.
8
Arrange four waffles on a cookie sheet and top each waffle with two chicken tenders, three bacon slices, and two cheese slices.
9
Place the waffles under the preheated broiler until the cheese is melted, taking about 3 to 5 minutes.
10
Spread three tablespoons of maple mayonnaise on each of the remaining four waffles and place them on top of the sandwiches.
