  • 1/2 teaspoon lemon pepper
  • 1/2 cup egg substitute
  • 2 (4 ounce) fillets catfish, cut into 1 inch pieces
  • 2 tablespoons vegetable oil

Combine dry bread crumbs and lemon pepper in a small bowl, stirring until well incorporated. In another small bowl, whisk together the egg substitute until smooth. Dip each catfish piece into the egg substitute mixture, coating it evenly, then roll it in the bread crumb mixture to coat thoroughly.

Heat a generous amount of oil in a medium-sized skillet over medium heat. Once the oil is hot, carefully place the coated catfish pieces in the skillet. Fry on both sides until they are lightly browned and flake easily with a fork, approximately 15 minutes. Remove the fried catfish from the oil and place it on paper towels to drain excess oil.
