Soak the potato wedges in a container filled with cold water for at least 60 minutes to help remove excess starch.

Next, preheat your oven to a high temperature of 450 degrees Fahrenheit (230 degrees Celsius). Line a baking sheet with cooking spray to prevent sticking.

Melt 1/2 cup of butter in a small saucepan over very low heat, stirring occasionally. Pour the melted butter into another shallow dish. In a separate shallow dish, combine flour, salt, and pepper to create a seasoning blend. Dip each potato wedge into the seasoned flour mixture, coating it evenly, before rolling it in the melted butter. Arrange the coated potato wedges on the prepared baking sheet. As you continue to bake, periodically dip each wedge into the remaining melted butter for added flavor and a thicker coating.
