- 1 tablespoon vegetable oil

Begin by cooking the bacon in a substantial, deep frying pan over a moderately high heat level, flipping it periodically, until it is uniformly browned, taking around 10 minutes. Transfer the cooked bacon to a plate lined with paper towels.

Next, mash the black-eyed peas in a bowl using a fork. Then, break the cooked bacon into small pieces and mix it with diced red peppers and shallots. Combine a sufficient amount of flour to hold the mixture together, then add salt and pepper to taste. Shape the mixture into four identical patties.
