- 1 cup self-rising flour
- 2 tablespoons rice flour
- 1/4 teaspoon baking powder
- 1 cup lager-style beer, or more as needed
- 4 (6 ounce) cod fillets, fully thawed if frozen
- 2 tablespoons rice flour, or as needed
- salt to taste
- vegetable oil for frying

Begin by preparing the batter mixture: Combine self-rising flour, rice flour, and baking powder in a bowl. Store it in the freezer until you're ready to use it.

Next, prepare the fish: Dry cod fillets thoroughly, then cut them lengthwise into eight 1-inch-thick strips. Place a shallow dish on the plate and sprinkle salt over it to season. Lightly dust cod strips with the seasoned rice flour mixture, ensuring you don't overdo it. Create a makeshift drying rack using crinkled foil and cover it with the same foil; place the cod strips on top.

Heat oil in a deep-fryer to 375 degrees F (190 degrees C).

Now, prepare the batter mixture again: Remove the flour mixture from the freezer. Gradually add beer to it, whisking continuously until you achieve a thick pancake-like consistency. If necessary, add more beer to reach the desired texture.

Dip floured cod strips into the batter mixture, making sure they're fully coated; gently lift them out and allow any excess to drip off.

Fry the cod in batches until it reaches a golden brown color, occasionally dunking if needed, for 3 to 4 minutes. Remove the fried cod from the oil and place it on paper towels to drain excess oil. Serve immediately
