Crispy Beef Samosas

  • 1 medium onion, finely chopped
  • 2 garlic cloves, crushed
  • 2 teaspoons ground coriander
  • 1 1/2 teaspoons ground cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon chile powder, or more to taste
  • 1/4 teaspoon ground ginger
  • 1 teaspoon garam masala
  • 1 (6 ounce) package frozen peas
  • 1/2 cup water
  • 1 tablespoon minced pickled jalapeno pepper
  • 1 tablespoon lemon juice
  • 1 (12 ounce) package wonton wrappers
  • vegetable oil for frying

Preheat a large skillet over medium heat. Introduce ground beef, onion, and garlic into the pan; cook until the beef is browned and crumbly, taking approximately 5 to 7 minutes. Gradually decrease the heat to a lower setting.

Combine coriander, cumin, salt, turmeric, chile powder, and ginger in the pan; mix well. Add peas and water to the mixture; bring it to a rolling boil. Cover the skillet and simmer, stirring occasionally, for about 25 minutes. Uncover the pan and cook over medium heat, stirring frequently, until any remaining liquid evaporates.

Add jalapenos and garam masala to the beef mixture; stir until well combined. Remove from heat and mix in lemon juice; let it cool down to a safe temperature, allowing at least 15 minutes for it to reach room temperature.

Take about 1 tablespoon of the beef mixture and place it in the center of a wonton wrapper. Moisten the edges with water, fold them over the filling, and seal it tightly. Repeat this process using the remaining filling and wonton wrappers.

Heat about 1/2 inch of oil in a large saucepan over medium-high heat. Add samosas in batches; fry until browned, taking approximately 1 to 2 minutes per side.
