Crispy Beef and Cheese Chimichangas
Ingredients
  • 1 pound ground beef
  • 1 small onion, chopped
  • 1 clove garlic, minced
  • 1/2 teaspoon taco seasoning mix, or more to taste
  • 1 teaspoon dried oregano
  • 1/4 cup sour cream
  • 1 (4 ounce) can chopped green chilies
  • 2 tablespoons distilled white vinegar
  • 1 cup shredded Cheddar cheese
  • 1/4 cup margarine
  • 6 (7 inch) corn tortillas
Instructions
1
Preheat your oven to a high temperature of 450 degrees Fahrenheit (230 degrees Celsius).
2
To begin, cook the ground beef, onion, garlic, taco seasoning, and oregano in a skillet over medium heat, constantly breaking the meat up into smaller pieces as it cooks. This process should take around 8 minutes, after which you can drain off any excess fat that has accumulated.
3
Mix in the sour cream, chilies, and vinegar until everything is well combined. Remove the skillet from the heat source.
4
Next, melt margarine in a small skillet over low heat. Once melted, submerge each tortilla into the warm margarine for approximately 30 seconds, or until it becomes soft and pliable.
5
Place the softened tortilla onto a baking sheet, then fill it with roughly 1/3 cup of the meat mixture. Fold the right and left sides of the tortilla over the filling, followed by the top and bottom, creating an envelope that completely encloses the contents. Flip the tortilla seam side down onto the baking sheet. Repeat this process with the remaining tortillas and filling.
6
Finally, bake the assembled tortillas in your preheated oven until they are crispy, taking around 15 minutes to achieve this.
