Ingredients
- 1 tablespoon vegetable oil
- 1 onion, finely diced
- 2 cloves garlic, minced
- 1 (15 ounce) can black beans, rinsed and drained
- 1 green bell pepper, chopped
- 2 tomatoes, chopped
- 1/2 (10 ounce) package frozen corn
- 12 (12 inch) flour tortillas
- 1 cup shredded Cheddar cheese
- 1/4 cup vegetable oil
Instructions
1
Preheat a skillet over medium heat, adding 1 tablespoon of oil to the pan.
2
Once hot, sauté the onion and garlic until they become tender and soft.
3
Next, combine the cooked onion and garlic with the beans, bell pepper, tomatoes, and corn in a bowl.
4
Allow this mixture to heat through until it reaches the desired temperature.
5
Now, spread an equal amount of the bean and vegetable mixture onto each of 6 tortillas.
6
Following this, sprinkle an equal amount of the Cheddar cheese on top of each tortilla.
7
To form quesadillas, place another tortilla on top of the cheese and bean mixture.
8
This will create a folded tortilla with the filling inside.
9
Heat 1/4 cup of oil in a large skillet over medium-high heat.
10
Carefully place the quesadillas in the hot oil, turning them once to ensure even cooking.
11
Continue to cook the quesadillas until the cheese is melted and both sides are lightly browned.
