Crispy Bang Bang Shrimp
Ingredients
  • 1/2 cup mayonnaise
  • 1/4 cup Thai-style sweet chili sauce
  • 3 dashes Sriracha hot chile sauce, or to taste
  • 1/2 cup cornstarch, or as needed
  • 1 pound medium shrimp, peeled and deveined
  • oil for frying
  • 8 lettuce leaves
  • 1 bunch green onion, chopped, or to taste
Instructions
1
Combine mayonnaise, sweet chile sauce, and Sriracha hot sauce in a bowl. Set it aside for now.
2
In another shallow dish, place cornstarch and gently press the shrimp into the cornstarch to coat them evenly; shake off any excess coating.
3
Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C), ensuring it reaches the correct temperature.
4
Cook the shrimp in batches until they are lightly browned on the outside and opaque throughout, taking about 3 to 5 minutes.
5
Transfer the cooked shrimp to paper towels to drain off any excess oil.
6
Place the cooked shrimp in a separate bowl and pour the chile sauce mixture over them; gently toss to coat the shrimp evenly.
7
Arrange a layer of lettuce leaves in a serving bowl. Add the cooked shrimp on top and finish with chopped green onion.
