  • 6 large bananas, halved crosswise and then lengthwise
  • 24 lumpia wrappers, defrosted
  • 1 tablespoon water, or as needed

Preheat a deep-fryer or large saucepan to the optimal temperature of 350 degrees F (175 degrees C).

Prepare a shallow dish by placing brown sugar in it. Take each banana quarter and coat it evenly with the brown sugar mixture. Next, wrap a lumpia wrapper around each coated banana, ensuring it is sealed by folding the last edge over and pressing gently with a spoon or your finger dipped in water. Continue this process with the remaining bananas and wrappers.

Fry the lumpia in batches, using the hot oil to achieve a golden brown color within approximately 5 minutes. Remove the cooked lumpia from the hot oil with a slotted spoon and transfer them to a paper towel-lined plate. As the lumpia cool, some sugar may seep out of the sides due to evaporation
