  • 3/4 cup Italian seasoned bread crumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon seasoned salt
  • 1 (9 inch) zucchini, peeled
  • 1/4 cup margarine or butter, melted

Preheat your oven to a high temperature of 425 degrees Fahrenheit (220 degrees Celsius). To make the baking process easier, cover your baking sheet with a layer of parchment paper or aluminum foil that has been lightly coated with cooking spray.

Cut the zucchini into long, thin strips by making a horizontal cut down the middle of each piece. Remove the seeds from the center of the zucchini strips.

Take a shallow dish and mix together some bread crumbs, shredded cheese, and a pinch of seasoned salt. Dip each zucchini strip into the melted butter, coating it evenly, then roll it in the bread crumb mixture to coat.

Hold each breaded zucchini strip gently between your hands and shake them slightly to allow any excess bread crumbs to fall away. Place the coated zucchini strips onto the prepared baking sheet.
