Crispy Baked Vegetable Tempura
Ingredients
  • 2 cups panko bread crumbs
  • salt to taste
  • 2 eggs
  • 1 cup broccoli florets
  • 1 cup cauliflower florets
  • 1 sweet potato, cut into 1/4-inch slices
  • 1 small squash, cut into 1/4-inch slices
  • 1 onion, sliced 1-inch thick and separated into rings
  • 10 green beans, trimmed
  • 1/4 cup all-purpose flour
  • 1/2 cup soy sauce
  • 1/4 cup water
  • 2 tablespoons rice vinegar
  • 2 teaspoons white sugar
  • 2 green onions, finely chopped
Instructions
1
Begin by setting the oven to a high temperature of 450 degrees Fahrenheit, or equivalently 230 degrees Celsius.
2
Next, take a large baking sheet and lightly coat it with cooking spray or oil to prevent sticking.
3
In a separate bowl, mix together the panko breadcrumbs and salt until well combined.
4
In another small bowl, whisk eggs until they become smooth and creamy.
5
Combine the broccoli, cauliflower, sweet potato, winter squash, onion, and green beans in a large bowl.
6
Add the flour to the vegetable mixture and toss everything together until each piece is evenly coated.
7
Remove excess flour from each vegetable by gently shaking off the excess.
8
Dip each vegetable piece into the beaten eggs, making sure they are fully coated.
9
Press the egg-coated vegetables into the panko mixture, pressing down gently to ensure they stick.
10
Use your hands to gently toss the vegetables around, allowing any excess panko crumbs to fall away.
11
Place the coated vegetables onto the prepared baking sheet in a single layer, making sure not to stack them.
12
Bake the vegetables in the preheated oven for 10-15 minutes, or until they are golden brown and crispy.
13
During the last few minutes of baking, occasionally flip the vegetables to ensure even cooking.
14
In a saucepan, combine soy sauce, water, rice vinegar, and sugar over medium heat.
15
Bring the mixture to a simmer and cook for 1-2 minutes, or until it becomes hot and well combined.
16
Remove the saucepan from the heat source and add sliced green onions.
17
Serve the vegetables alongside the hot, savory sauce.
