Ingredients
- 2 cups milk
- 3 eggs
- 1 tablespoon water
- 1 cup dry bread crumbs
- 4 skinless, boneless chicken breast halves
- 1 Red Delicious apple, cored and diced
- 1 (8 ounce) package dry bread stuffing mix
- 2 cups apple juice, or as needed
- 2 tablespoons butter, or as needed
- 1 Red Delicious apple - peeled, cored and diced
Instructions
1
Preheat your oven to 350 degrees Fahrenheit (or 175 degrees Celsius, if you prefer metric).
2
In a small container, pour the milk and set it aside. In another bowl, combine the eggs and water using a whisking motion to blend them together. Place the bread crumbs in a shallow dish or on a plate, ready for use.
3
Dip each chicken breast half into the milk, followed by the egg mixture, and finally coat with the bread crumbs on all sides. Place the coated chicken breast halves on a plate, and set them aside for now.
4
Using the package instructions as your guide, prepare the stuffing mix by following the given directions. However, in this case, you will be substituting apple juice for water as instructed on the package. When heating the juice and butter in a pan, add the diced apple with its peel to the mixture. Stir until the stuffing mix is fully incorporated into the liquid, allowing it to absorb all the flavors.
5
Transfer the prepared stuffing mix to a baking dish and top it with the remaining pieces of apple. Place the chicken breast halves on top of the stuffing, covering them completely with aluminum foil.
6
Bake the chicken and stuffing in the preheated oven for 45 to 50 minutes, or until the juices run clear when you cut into one of the chicken breasts.
