- 3 teaspoons olive oil, divided
- 1/2 cup Cheddar cheese, divided
- 1/2 yellow onion, diced fine
- 2 slices bacon

Preheat the air fryer to its highest temperature setting, which is equivalent to 350 degrees F (or 175 degrees C).

Next, lightly anoint the potatoes with a small amount of oil, just enough to coat them evenly. Place the potatoes in the air fryer basket and cook for 10 minutes, or until they are partially cooked.

Then, give the potatoes another light coating of oil and continue cooking for an additional 10 minutes, or until they are tender to the touch.

Once the potatoes are cooked, cut them in half lengthwise and scoop out their soft interior. Transfer the potato flesh to a bowl and mix it with a generous helping of Cheddar cheese.

In a separate pan, sauté the onion and bacon over high heat, stirring occasionally, until the bacon is nicely browned on all sides. This should take around 10 minutes.

Mix the cooked onion and bacon into the mashed potato mixture, creating a delicious filling. Stuff this mixture into the hollowed-out potato skins.

Finally, sprinkle any remaining Cheddar cheese on top of the stuffed potatoes and return them to the air fryer. Cook until the cheese is melted and bubbly, taking about 6 minutes to achieve.
