  • 4 garlic cloves, minced

  • salt and ground black pepper to taste
  • vegetable oil for frying, or as needed

Cook the bacon in a skillet over an average heat setting until it reaches a crunchy state, 3 to 5 minutes. Move the bacon to a plate lined with paper towels for draining; allow it to relax and break apart. Set aside the bacon drippings in the skillet.

Mix the broken-down bacon, diced potatoes, flour, eggs, minced garlic, dried thyme, salt, and black pepper in a large container.

Pour 1/4-inch vegetable oil into the skillet with the reserved bacon drippings; heat over an average heat setting until the oil and drippings sparkle.

Carefully drop spoonfuls of the potato mixture by heaping tablespoonfuls into the hot oil; flatten them into small patties about 3 inches in diameter. Cook until browned, approximately 3 minutes on each side.
