  • 2 medium yellow squash, thinly sliced
  • 1/2 medium onion, thinly sliced
  • 1 jalapeno pepper, chopped
  • 1 dash soy sauce
  • salt and pepper to taste

Heat a large skillet over high heat, stirring occasionally, until the oil is hot and almost smoking. Add the bacon to the skillet, breaking it up with a spoon as it cooks, until it is evenly browned and crispy, approximately 10 minutes. Remove the cooked bacon from the skillet with a slotted spoon, leaving the drippings behind.

Next, add sliced squash, chopped onion, and diced jalapeño to the skillet. Continue cooking until they are tender but still retain some firmness, stirring constantly throughout the process.

Now, add the crumbled cooked bacon back into the skillet. Add a small amount of soy sauce, salt, and pepper to taste, stirring well to combine the seasonings. Serve hot
