  • 2 cups buttermilk
  • 1 1/2 lemons, zested
  • 1 teaspoon ground paprika
  • 1 teaspoon ground black pepper
  • 1/2 cup all-purpose flour
  • 1 bunch fresh asparagus, trimmed

Preheat a deep-sided skillet over medium heat, filling it with 1-inch of vegetable oil. Combine buttermilk, lemon zest, paprika, and black pepper in a large bowl, whisking them together. In another wide bowl, pour flour into it. Position a plate lined with paper towels near the stovetop.

Dip 1/3 of the asparagus into the buttermilk mixture, ensuring it's fully coated. Then, coat it in flour, making sure to cover every part thoroughly. Repeat the process by dipping 1/3 of the asparagus into the buttermilk mixture again and then coating it in flour. Place the coated asparagus, arranged side by side, onto a baking sheet. Repeat this process with the remaining asparagus.

Fry the coated asparagus in three batches, submerged in hot oil until it turns golden brown, taking about 2 to 4 minutes. Remove the cooked asparagus from the oil and place it on the paper towel-lined plate. Repeat this frying process until all the asparagus sticks are cooked, and serve immediately.
