Crispy Apple Hand Pies

  • 1/2 cup shortening, chilled
  • 1/2 cup cold water
  • 2 apples - peeled, cored and diced
  • 1/4 cup white sugar, or to taste
  • 1/8 teaspoon ground cinnamon, or to taste
  • 1 quart oil for frying, or as needed

Combine dry ingredients: In a large bowl, whisk together flour and salt until well combined. Use two knives or a pastry blender to cut in shortening, creating a mixture that resembles coarse crumbs.

Gradually add liquid: Add cold water, 1 tablespoon at a time, mixing with a fork until the flour mixture is moistened. Be mindful not to add excess water, as you want the pastry to form a ball when squeezed.

Rest the dough: Wrap the moistened pastry mixture in plastic wrap and refrigerate for 30 minutes to allow it to relax.

Prepare the filling: In a saucepan, combine sliced apples and granulated sugar. Sprinkle cinnamon over the top and toss to coat evenly. Cook, covered, on low heat until the apples are soft; mash with a fork to create a thick applesauce. Set aside to cool.

Roll out the dough: On a lightly floured surface, roll out the chilled pastry dough to 1/8-inch thickness. Use a large cookie cutter to cut out eight 4-inch pastry rounds.

Assemble the pies: Place 1 heaping tablespoon of applesauce in the center of each pastry round. Moisten the edges with cold water, fold the dough in half to form a triangle, and press the edge with a fork to seal. Repeat with remaining pastry and filling.

Heat the oil: In a deep fryer or large saucepan, heat oil to 375 degrees F (190 degrees C).

Fry the pies: Carefully lower the pies into the hot oil in batches. Fry until golden brown, about 2 to 3 minutes on each side. Transfer the pies to a paper towel-lined plate to drain excess oil. Repeat with remaining pies.
