  • 1 tablespoon canola oil
  • 4 1/2 cups chopped yellow onion
  • 1 teaspoon kosher salt
  • 4 tablespoons water, divided
  • 1 (28 ounce) package frozen shoestring potato fries
  • 4 slices American cheese

Combine the ingredients in a small bowl to create the Spread by whisking together mayonnaise, ketchup, relish, sugar, and vinegar until they are fully incorporated. Cover the bowl with a lid and set it aside until you're ready to serve.

Next, heat the butter and oil in a large skillet over medium heat. Add sliced onions and a pinch of salt to the skillet, then cook, stirring occasionally, until they are softened and have developed a golden-brown color. As the skillet starts to dry out, add 1 tablespoon of water to prevent burning. Continue cooking, stirring frequently, and adding more water in 1-tablespoon increments as needed until the onions are extremely soft, deeply browned, and have a jam-like consistency. This process should take around 20-30 minutes, or until you've used up all the water. Cover the skillet with a lid and set it aside to keep the onions warm.
