Crispy Alligator Bites
Ingredients
  • 2 pounds alligator meat, cut into bite-size pieces
  • 2 tablespoons vinegar
  • salt and pepper to taste
  • 1 cup cornmeal
  • 1/4 cup all-purpose flour
  • 2 tablespoons garlic powder
  • 2 teaspoons black pepper
  • 1/2 teaspoon cayenne pepper
  • oil for frying
  • 3 tablespoons mayonnaise
  • 1 tablespoon brown mustard
  • 1 tablespoon red wine vinegar
  • 2 teaspoons prepared horseradish

Combine alligator meat in a medium-sized container. Add vinegar and sprinkle salt and pepper over it. Ensure the ingredients are well incorporated by stirring until a uniform mixture is achieved. Cover the container and refrigerate for approximately 10 minutes.

In a separate, resealable bag, combine cornmeal, flour, garlic powder, black pepper, and cayenne pepper. Seal the bag tightly.

Using a handful of alligator meat, remove excess liquid by squeezing it firmly. Add the squeezed meat to the resealable bag and seal it again. Shake the bag vigorously to coat the meat evenly with the cornmeal mixture. Remove a portion of the coated meat from the bag and shake off any excess mixture. Repeat this process with the remaining alligator meat, using one handful at a time.

Heat 1 inch of oil in a deep saucepan over medium-high heat. Carefully add batches of the coated meat to the hot oil, ensuring not to overcrowd the saucepan. Fry the meat until it turns golden brown, approximately 3 minutes. Transfer the fried meat to a paper towel-lined plate to drain excess oil.

Prepare the sauce by mixing together mayonnaise, mustard, vinegar, and horseradish in a small bowl until well combined.
