Ingredients
- 1 (16 ounce) package frozen shredded hash brown potatoes, thawed
- 1/2 cup shredded onion
- 1 egg
- kosher salt and ground black pepper to taste
- 2 tablespoons matzo meal

Firstly, preheat your air fryer to 375 degrees F (190 degrees C) as per the manufacturer's guidelines.

Next, prepare a flat surface by laying out a sheet of parchment or waxed paper for easy cleanup.

To remove excess moisture, place thawed potatoes and shredded onion on multiple layers of paper towels. Cover them with additional paper towels and apply pressure to extract as much liquid as possible.

In a large bowl, whisk together an egg, salt, and pepper until well combined. Gradually incorporate the potatoes and onion using a fork, ensuring they're evenly distributed throughout the mixture.

Add matzo meal to the bowl and mix until it's fully incorporated into the potato mixture. Using your hands, shape the mixture into ten 3- to 4-inch wide patties.

Place these patties on the prepared parchment or waxed paper, leaving space between each one for even cooking.

Before placing the patties in the air fryer, spray the basket with a generous amount of cooking spray to prevent sticking.

Carefully add half of the patties to the air fryer basket, followed by a generous spraying of cooking spray.

Air-fry the patties until they're crispy and dark golden brown on the outside, taking around 10 to 12 minutes. If you prefer a softer latke, check for doneness at the 8-minute mark.

Remove the cooked patties to a plate and repeat the process with the remaining patties, spraying them generously with cooking spray before air-frying.
