- 2 green tomatoes, cut into 1/4-inch slices
- salt and freshly ground black pepper to taste
- 1/3 cup all-purpose flour
- 1/2 cup buttermilk
- 2 large eggs, lightly beaten
- 1 cup plain panko bread crumbs
- 1 cup yellow cornmeal
- 1 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1 tablespoon olive oil, or as needed

Prepare the tomatoes for cooking by sprinkling them with salt and pepper to enhance their flavor.\nNext, prepare a shallow dish by placing an amount of flour in it. Then, combine buttermilk and eggs in another shallow dish and whisk them together until smooth. \nIn a third shallow dish, combine panko bread crumbs, cornmeal, garlic powder, and paprika to create a crunchy coating mixture. \nDip each tomato slice into the flour, shaking off any excess, before coating it with the egg mixture and pressing both sides firmly into the cornmeal mixture to create a crispy exterior. \nPreheat your air fryer oven to 400 degrees F (200 degrees C) and brush the basket with olive oil to prevent sticking. \nCook the breaded tomatoes in batches, placing them gently into the prepared fryer basket so they don't touch each other. Brush the tops of the tomatoes with olive oil to add extra flavor.\nCook the tomatoes in the preheated air fryer for 12 minutes, flipping them halfway through and brushing again with olive oil to keep them moist. Continue cooking until they are crispy and golden brown, adding a few more minutes as needed. \nRemove the cooked tomatoes to a paper towel-lined rack to keep them crisp and prevent moisture from building up. Repeat the cooking process with any remaining tomatoes.
