Ingredients
- 1 russet potato
- 2 teaspoons vegetable oil
- salt and ground black pepper to taste
- 3/4 cup all-purpose flour
- 2 tablespoons cornstarch
- 1/2 teaspoon salt
- 1/2 teaspoon garlic powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon baking powder
- 3/4 cup malt beer
- 4 (3 ounce) fillets cod fillets
Instructions
1
Prepare crispy potato chips by peeling the potatoes and cutting them into 12 wedges. Submerge the potato wedges in a medium-sized bowl filled with 3 cups of water for 15 minutes. Remove the wedges from the water and replace them with fresh water, allowing them to soak for an additional 15 minutes.
2
While the potatoes are soaking, prepare a tasty fish dish. In a large bowl, combine flour, cornstarch, salt, garlic powder, baking soda, and baking powder. Gradually add in 1/2 cup of malt beer, stirring the mixture until it's well combined. If the batter seems too thick, you can add a little more beer, 1 tablespoon at a time.
3
Place the cod fillets on a rimmed baking sheet lined with a drip rack. Spoon half of the batter over the fillets, making sure they're evenly coated. Place the baking sheet in the freezer to allow the batter to solidify, which should take around 35 minutes. Flip the fillets over and coat the other side with the remaining batter. Return the baking sheet to the freezer for another 35 minutes.
4
Preheat your air fryer to 400 degrees F (200 degrees C) for 8 minutes. Then, cook the frozen fish fillets in the preheated air fryer for 15 minutes, flipping them halfway through.
5
While the fish is cooking, drain off any remaining water from the potato wedges and gently blot them dry with a paper towel. Place the potatoes in a medium bowl and add some oil, salt, and pepper; toss until they're well coated.
6
Finally, cook the coated potato wedges in the preheated air fryer for 15 minutes.
