  • 1 medium eggplant
  • 1/2 cup Italian bread crumbs
  • 1/4 cup freshly grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon ground black pepper
  • 1/4 cup all-purpose flour
  • 2 eggs

Slice the eggplant into thin slices, approximately half an inch in thickness, and then cut each slice into smaller sticks, roughly a quarter of an inch in length. Pat the eggplant dry to remove excess moisture.

In a separate bowl, mix together bread crumbs, grated Parmesan cheese, dried Italian seasoning, salt, chopped fresh basil, garlic powder, and onion powder. In another bowl, pour flour for coating purposes.

In a third bowl, whisk eggs until well combined.

Dip each eggplant stick into the flour coating, then into the beaten eggs, and finally coat with the bread crumb mixture. Place the coated eggplant sticks on a plate and allow them to rest for 5 minutes, allowing the coating to set.

Preheat an air fryer to a high temperature of 370 degrees F (185 degrees C).

Place the breaded eggplant sticks in the air fryer basket, making sure they are not overlapping or touching each other. If necessary, cook in batches to ensure even cooking.

Cook the breaded eggplant sticks in the preheated air fryer for 8 to 10 minutes. Periodically shake the basket and continue cooking until they reach your desired level of crispiness, adding an additional 4 to 6 minutes as needed.
