- 1/4 cup freshly grated Parmesan cheese

Cut the zucchini into two or three equal-sized pieces, approximately 3 inches in length. Next, use a spiralizer to create long, curly strands from each piece.

In a separate bowl, whisk the eggs until they become light and fluffy. Gradually pour in melted butter while continuously whisking the mixture, ensuring it becomes smooth and well combined.

In another bowl, mix together flour, dried oregano, garlic powder, and black pepper. Combine panko bread crumbs with grated Parmesan cheese in a third bowl.

Dip the zucchini strands into the seasoned flour mixture, gently shaking off any excess to prevent a thick layer from forming. Next, submerge the zucchini in the egg wash mixture, allowing any excess to drip off before coating with the Parmesan-bread crumb mixture. Place the breaded zucchini fries on a clean sheet pan.

Preheat your air fryer to 400 degrees F (200 degrees C). Set the timer for 12 minutes. Transfer the breaded zucchini fries to the air fryer basket in batches, leaving enough space between each piece to allow for even cooking.
