  • 2 ears fresh corn, husked
  • 3 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon ground black pepper
  • 1/4 cup mayonnaise
  • 2 teaspoons lime juice
  • 1 teaspoon Mexican-style hot sauce (such as Valentina®)
  • 2 tablespoons crumbled cotija cheese
  • 1 tablespoon chopped cilantro

First, preheat the air fryer to a high temperature of 400 degrees F (200 degrees C).

Next, take an ear of corn and place it on a stable surface. Cut the ear in half lengthwise, then cut each half in half again to create 8 separate "ribs".

Then, combine olive oil, chili powder, garlic powder, and black pepper in a small bowl. Mix until the ingredients are fully incorporated.

After that, brush the mixture onto both sides of each rib. Place the ribs in the air fryer basket.

While the corn is cooking, mix together mayonnaise, lime juice, and hot sauce in a separate small bowl. Ensure the ingredients are fully combined.

Once the corn is done, remove it from the air fryer and transfer it to a serving plate.

Finally, drizzle the mayonnaise-lime-hot sauce mixture over the corn ribs. Top with cotija cheese and sprinkle with cilantro.
