- 2 large eggs
- 2/3 cup unsweetened flaked coconut
- 1/3 cup panko bread crumbs
- 12 ounces uncooked medium shrimp, peeled and deveined

- 1/2 teaspoon kosher salt, divided
- 1/4 cup honey
- 1/4 cup lime juice
- 1 serrano chile, thinly sliced
- 2 teaspoons chopped fresh cilantro

Combine flour and pepper in a shallow container to create a mixture. Gently whisk eggs in another shallow dish. Mix coconut and panko in a third shallow dish.

Dredge shrimp in the flour mixture, then shake off any excess. Dip floured shrimp into eggs, allowing any surplus to fall away from the surface. Next, coat the shrimp in coconut mixture, pressing firmly to secure it in place. Place the prepared shrimp on a serving plate. Lightly spray the shrimp with cooking spray.

Heat the air fryer to 400 degrees F (200 degrees C). Place half of the shrimp in the air fryer and cook for approximately 3 minutes. Flip the shrimp over and continue cooking until golden brown, taking around 3 minutes more. Add a pinch of salt to taste. Repeat the process with the remaining shrimp.
