Crispy Air Fryer Chimichangas
Ingredients
  • 1 tablespoon vegetable oil
  • 1/2 cup diced onion
  • 2 cups shredded cooked chicken
  • 1/2 (8 ounce) package Neufchatel cheese, softened
  • 1 (4 ounce) can hot fire-roasted diced green chiles (such as Ortega®)
  • 1/4 cup chicken broth
  • 1 1/2 tablespoons chicken taco seasoning mix (such as McCormick®)
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 6 (10 inch) flour tortillas
  • 1 cup shredded Mexican cheese blend, or to taste
  • avocado oil cooking spray

Preheat your air fryer oven to the temperature specified by the manufacturer, which is 400 degrees Fahrenheit or 200 degrees Celsius.

In a medium-sized skillet, heat some oil over medium heat. Add sliced onions and cook until they become soft and translucent, taking around 4 to 6 minutes. Next, add the chicken, Neufchâtel cheese, green chiles, chicken broth, taco seasoning, salt, and pepper to the skillet. Stir everything together until it's well combined and the cheese has been evenly distributed.

In a large skillet or on the grates of your gas stove, warm up some tortillas until they become soft and pliable. Place 1/3 cup of the chicken mixture in the center of each tortilla, followed by a generous spoonful of Mexican cheese. Fold the top and bottom edges over the filling, then roll each tortilla into a neat burrito shape. Lightly spray with cooking spray and carefully place them in the air fryer basket.

Cook the burritos in the air fryer oven for 4 to 6 minutes. Flip each one over, give them a light spray with cooking spray, and continue to cook until they're lightly browned on the outside, taking an additional 2 to 4 minutes.
