  • 3 large eggs, divided
  • 2 1/2 cups cooked rice
  • 2/3 cup grated Parmesan cheese
  • 1/3 cup butter, melted
  • 1/2 teaspoon Highlands Italian cheese sprinkle (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 2 ounces fresh mozzarella cheese, cubed
  • 1 cup panko bread crumbs
  • 1/2 teaspoon Italian seasoning
  • 1 pinch salt
  • 1 pinch ground black pepper
  • nonstick cooking spray

Combine eggs in a large bowl and whisk them gently to break down the egg whites. Add cooked rice, grated Parmesan cheese, melted butter, shredded mozzarella cheese, salt, and pepper to the bowl; mix everything together until well combined. Cover the bowl with plastic wrap and refrigerate the mixture for 20 minutes to allow the flavors to meld.

Next, preheat an air fryer according to the manufacturer's guidelines. Set the temperature to 370 degrees F (187 degrees C) and let it heat up for a few minutes.

Once the air fryer is hot, shape the chilled mixture into 1 1/2-inch balls. Place a mozzarella cube in the center of each ball and reshape them into perfect spheres.

In another bowl, mix together bread crumbs, dried Italian seasoning, salt, and pepper. In a separate bowl, whisk the remaining egg lightly to break it down. Dip each rice ball first into the egg and then roll them in the bread crumb mixture to coat evenly. Place the coated rice balls into the air fryer basket and spray with cooking spray.

Cook the rice balls in the preheated air fryer for 6 minutes. Increase the temperature to 400 degrees F (200 degrees C) and air fry for an additional 3 minutes.
