- 7 ounces ground beef
- 1 cup frozen mixed vegetables
- 1 small onion, diced
- 3 cloves garlic, crushed
- 1 teaspoon soy sauce
- 1 (16 ounce) package egg roll wrappers
- 1 tablespoon vegetable oil, or to taste

Immerse the noodles in a bowl of boiling water for 5 minutes, allowing them to become pliable. Cut the noodles into smaller sections.

Heat a generous amount of sesame oil in a large skillet over medium-high heat. Add the ground beef, mixed vegetables, onion, and garlic to the pan. Cook until the beef is almost evenly browned throughout, approximately 6 minutes. Remove from heat and set aside.

Stir in the cooked noodles to allow them to absorb any remaining juices. Add a dash of soy sauce to the filling.

Preheat the air fryer to 350 degrees Fahrenheit (175 degrees Celsius).

Place a single egg roll wrapper on a flat surface, positioning the filling diagonally across it. Fold the top corner over the filling, followed by the two side corners; brush the center with a small amount of cold water to seal the spring roll. Repeat this process for each remaining wrapper and filling.

Brush a thin layer of vegetable oil onto the tops of the spring rolls. Arrange a batch of spring rolls into the air fryer basket, cooking until crispy and lightly browned, approximately 8 minutes. Continue cooking in batches until all spring rolls are cooked to perfection.
